Pumpkin Spice Caramel Corn

A deliciously spiced caramel popcorn treat perfect for fall snacking or holiday gatherings.

Ingredients

Popcorn

  • 1 cup popcorn (popped plain) (no butter, no salt)

Pumpkin spiced pepitas or nuts

  • 1 cup pumpkin spiced pepitas (or your favorite nut)

Butter

  • 10 oz unsalted butter

Brown sugar

  • 15 oz packed brown sugar (about 2 cups)

Corn syrup

  • 3/4 cup corn syrup

Kosher salt

  • 2 1/2 teaspoons kosher salt (Morton's)

Pumpkin spice

  • 2-3 teaspoons pumpkin spice

Baking soda

  • 3/4 teaspoon baking soda

Instructions 

  • Preheat oven to 250°F (120°C). Arrange popcorn and nuts on pans.
  • Melt butter, then stir in brown sugar, corn syrup, salt, and pumpkin spice. Bring to a boil for 5 minutes.
  • Remove from heat, stir in baking soda until bubbly, then pour over popcorn and nuts. Bake for 15-20 minutes, stirring occasionally.
  • Repeat baking and stirring steps twice more, then cool on a non-stick surface and break into pieces.
  • Store in an airtight container for up to 5 days. Reheat briefly if it softens. Enjoy!

Notes

For extra crunch, stir the popcorn halfway through baking.
