A delicious layered dessert combining pumpkin, pecans, and spiced cake for a festive treat.

Ingredients

Pecan Topping

  • 1 1/4 cups chopped pecan pieces (toasted and divided)

Spice Cake

  • 1 box Spice cake mix (plus eggs, water, and oil as per package)
  • 2 oz cream cheese (softened)
  • 1 15-oz can pumpkin
  • 1 1/2 cups powdered sugar
  • 2 tsp pumpkin pie spice
  • 3 8-oz frozen whipped topping (thawed)
  • 1 or 2 tsp vanilla extract
  • 1 16-oz caramel sauce (Ghirardelli or similar)

Gingersnap cookies

  • for garnishing gingersnap cookies (optional)

Instructions 

  • Preheat oven to 350°F. Toast pecans for 6-8 minutes, then cool and set aside 1/4 cup for garnish.
  • Prepare spice cake according to package, bake in 13x9-inch pan, cool, then cut into 1-inch cubes.
  • Mix cream cheese, pumpkin, powdered sugar, pumpkin pie spice, and vanilla until smooth. Fold in whipped topping.
  • Layer 1/3 cake cubes in a trifle bowl, drizzle with 1/3 caramel, sprinkle with 1/3 pecans, then add 1/2 pumpkin filling. Repeat layers, finishing with whipped topping and garnishes.
  • Chill for at least 4 hours or overnight before serving. Garnish with gingersnaps and remaining pecans.

Notes

For a more stable topping, use store-bought whipped topping and add just before serving.
