Delight in the warm flavors of fall with these soft and chewy pumpkin spice cookies, loaded with white chocolate and pumpkin spice chips.

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour ((360g))
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup butter, room temperature ((226g))
  • 1 cup brown sugar, packed ((200g))
  • ½ cup granulated sugar ((100g))
  • 2 eggs room temperature
  • 2 teaspoons vanilla extract

Mix-ins

  • 2 cups white chocolate chips ((340g))
  • 1 cup pumpkin spice chips ((170g))

Instructions 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  • Cream butter, brown sugar, and granulated sugar until light and fluffy.
  • Add vanilla and eggs, mix until combined, then incorporate flour mixture.
  • Fold in white chocolate and pumpkin spice chips.
  • Scoop dough onto baking sheet and bake for 10-14 minutes.

Notes

For extra flavor, add chopped nuts or a sprinkle of sea salt on top before baking.
