A flavorful and crunchy homemade granola infused with warm pumpkin spice flavors, perfect for breakfast or snacking.

Ingredients

Dried ingredients

  • 3 cups rolled oats (not quick cook)
  • 1/4 cup light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 3/4 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp vanilla extract
  • 1 tbsp vegetable/sunflower oil
  • 1 tbsp maple syrup
  • 1/2 cup pumpkin pureé (not pie filling)
  • 1/2 - 3/4 cup add ins: pumpkin seeds, cranberries, pecans etc (optional)

Instructions 

  • Preheat oven to 160°C (325°F) and line a baking tray.
  • Mix oats, sugar, spices, and vanilla in a large bowl.
  • Add oil, maple syrup, and pumpkin purée; stir until coated.
  • Spread mixture evenly on the tray and bake for 35-45 minutes, stirring every 15 minutes.
  • Cool completely before storing. Serve with milk, yogurt, or as a snack.

Store in an airtight container for up to one week.
