A delicious and easy-to-make pumpkin spice granola perfect for breakfast or snacking, packed with warm spices and crunchy nuts.
Ingredients

halved or roughly chopped pecans/walnuts

pumpkin/pepita seeds

shredded coconut (optional)

chia seeds (optional)

pumpkin pie spice

maple syrup

coconut oil (melted)
Instructions
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
Mix oats, nuts, seeds, coconut, spices, and salt in a large bowl.
Add maple syrup and melted coconut oil; stir until well coated.
Spread mixture evenly on baking sheet and bake for 30 minutes.
Stir granola, then bake for another 15 minutes. Cool before adding optional mix-ins.
Notes
Store in an airtight container for up to two weeks.
