A delicious and easy-to-make pumpkin spice granola perfect for breakfast or snacking, packed with warm spices and crunchy nuts.

Ingredients

Dry ingredients

  • 3 cups rolled oats
  • 1 cup halved or roughly chopped pecans/walnuts
  • 1/3 cup pumpkin/pepita seeds
  • 1/2 cup shredded coconut (optional)
  • 3 tbsp chia seeds (optional)
  • 2 tbsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil (melted)

Instructions 

  • Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • Mix oats, nuts, seeds, coconut, spices, and salt in a large bowl.
  • Add maple syrup and melted coconut oil; stir until well coated.
  • Spread mixture evenly on baking sheet and bake for 30 minutes.
  • Stir granola, then bake for another 15 minutes. Cool before adding optional mix-ins.

Notes

Store in an airtight container for up to two weeks.
