Delight in these soft, spiced sugar cookies with a crunchy Demerara sugar coating, perfect for fall festivities.

Ingredients

Dry ingredients

  • 3 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • 3 tablespoons pumpkin pie spice

Wet ingredients

  • 2 sticks butter, softened ((1 cup))
  • 1 ¼ cups granulated sugar
  • 1/3 cup dark molasses
  • 2 large eggs
  • 1 cup pumpkin puree
  • 2 cups Demerara sugar (divided)

Instructions 

  • Whisk dry ingredients; set aside.
  • Beat butter until light; add sugar, molasses, eggs, and pumpkin, mixing well.
  • Combine dry and wet; form into logs, wrap, and freeze for 2+ hours.
  • Preheat oven to 350°F; cut logs into rounds, coat with Demerara sugar.
  • Bake in batches for 8-9 minutes; cool on racks and store airtight.
