Ingredients

Baking Ingredients

  • 113 g unsalted butter, melted
  • 80 g pumpkin puree
  • 200 g white sugar
  • 240 g all purpose flour
  • 1 large egg
  • 10 ml vanilla extract
  • 3.5 g pumpkin pie spice
  • 1 g baking powder
  • 2 g salt
  • to taste cinnamon
  • 113 g cream cheese, softened
  • 57 g unsalted butter, softened
  • 30 g powdered sugar
  • 5 ml vanilla extract

Instructions 

  • Preheat oven to 350°F.
  • Mix melted butter, pumpkin, sugar, egg, and vanilla until smooth.
  • Add flour, pumpkin pie spice, baking powder, and salt; mix to form dough.
  • Chill dough for 25 minutes, then roll into balls and place on baking sheet.
  • Bake for 18 minutes; cool and frost with cream cheese mixture.
  • Sprinkle with cinnamon or pumpkin pie spice before serving.

Notes

For extra flavor, add chopped nuts or chocolate chips to the dough.
