Ingredients

  • 113 grams unsalted butter, softened
  • 50 grams granulated sugar
  • 100 grams brown sugar, packed
  • 120 grams canned pumpkin puree
  • 1 large egg yolk
  • 5 milliliters vanilla extract
  • 190 grams all-purpose flour
  • 1 grams baking powder
  • 1 grams baking soda
  • 1 grams salt
  • 2 grams ground cinnamon
  • 1 grams ground nutmeg
  • 1 grams ground ginger
  • 1 grams ground cloves
  • 50 grams granulated sugar (for rolling)

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a baking sheet.
  • Cream butter, granulated sugar, and brown sugar until fluffy.
  • Add pumpkin, egg yolk, and vanilla; mix well.
  • Whisk dry ingredients in a separate bowl, then combine.
  • Form dough balls, roll in sugar, and place on sheet.
  • Bake for 10-12 minutes; cool on rack.
