A flavorful and moist pumpkin bread infused with warm spices and a hint of honey, perfect for fall baking.

Ingredients

Dough

  • 1/3 cup Unsweetened vanilla almond milk (warmed to 80-90°F)
  • 2 tsp Active dry yeast
  • 3 Tbsp Honey
  • 1 tsp Vanilla extract
  • 1/2 tsp Ground cinnamon
  • 1 tsp Pumpkin pie spice
  • 1/8 tsp Ground cloves
  • 1/8 tsp Ground ginger
  • 1/2 tsp Fine sea salt
  • 1 Medium egg Egg
  • 1/2 cup Canned pumpkin
  • 1 1/2 cups Unbleached all-purpose flour
  • 3/4 Cup Whole wheat flour

Instructions 

  • Activate yeast by mixing warm almond milk, 1 tsp honey, and yeast; let sit 5 minutes until bubbly.
  • Add egg, spices, remaining honey, vanilla, and pumpkin to yeast mixture; stir in flours.
  • Knead dough with mixer for 7 minutes until soft and elastic.
  • Let dough proof in a greased bowl, covered, for 45 minutes until doubled.
  • Shape dough into a loaf, place in greased pan, proof for 45 minutes.
  • Bake at 350°F (175°C) for 25 minutes, cool before removing from pan.

Notes

Ensure the dough is not sticky and proof in a warm place for best rise.
