Instructions
Activate yeast by mixing warm almond milk, 1 tsp honey, and yeast; let sit 5 minutes until bubbly.
Add egg, spices, remaining honey, vanilla, and pumpkin to yeast mixture; stir in flours.
Knead dough with mixer for 7 minutes until soft and elastic.
Let dough proof in a greased bowl, covered, for 45 minutes until doubled.
Shape dough into a loaf, place in greased pan, proof for 45 minutes.
Bake at 350°F (175°C) for 25 minutes, cool before removing from pan.
Notes
Ensure the dough is not sticky and proof in a warm place for best rise.
