A fast, creamy pasta dish packed with chicken, kale, and cheese, perfect for a quick weeknight dinner.

Ingredients

Vegetables and Herbs

  • 1 cup chopped kale
  • 1/4 tsp lemon juice
  • 1 tbsp olive oil
  • 1 onion sliced onion
  • 2 tbsps minced garlic
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 1/2 cups cream (10% or whipping)
  • 1 cup shredded mozzarella or cheddar
  • 2 cups cooked chopped chicken
  • 2 cups penne pasta
  • to taste black pepper and parmesan to serve

Instructions 

  • Massage kale with lemon juice and olive oil until bright green, then set aside.
  • Cook pasta while preparing the sauce.
  • Heat oil and butter, cook onion until tender, then add garlic and cook until fragrant.
  • Add chicken and kale, heat through, then pour in cream and simmer for 5 minutes.
  • Stir in cooked pasta, top with cheese, cover until melted, then season with pepper and parmesan.

Notes

This dish comes together in about 17 minutes, making it perfect for busy weeknights.
