Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 0.5 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions 

  • Season chicken with salt, pepper, and garlic powder.
  • Cook chicken in olive oil and butter until golden and cooked through, then set aside.
  • Sauté minced garlic in the same skillet, then add chicken broth and simmer for 1 minute.
  • Stir in heavy cream, lemon juice, lemon zest, and Parmesan; simmer until slightly thickened.
  • Return chicken to skillet, spoon sauce over, heat briefly, then garnish with parsley and serve.

Notes

For extra flavor, add a splash of white wine or serve over pasta or rice.
