A flavorful and quick dish combining crispy chicken with a tangy sweet and sour sauce, perfect for a weeknight dinner.

Ingredients

Protein

  • 1 lb skinless boneless chicken thighs (or chicken breast)
  • 1 medium red bell pepper (or green/yellow/orange)
  • 0.5 cup pineapple (diced)
  • 0.5 onion onion (sliced)
  • 0.25 cup cornstarch (or potato starch)
  • 0.33 cup vegetable oil (or any neutral oil)
  • 1 tsp salt
  • 0.5 tsp garlic powder (or 1 tsp minced garlic)
  • 0.5 tsp sesame seeds (optional garnish)
  • 1 green onion green onion (finely chopped for garnishing)
  • 0.33 cup ketchup
  • 0.5 cup brown sugar (or white sugar)
  • 0.25 cup white vinegar (or rice vinegar/apple cider vinegar)
  • 2 tbsp water (cold)
  • 1 tbsp soy sauce (regular)
  • 1 tbsp cornstarch (or potato starch)

Instructions 

  • Combine sauce ingredients in a small bowl and set aside.
  • Dice chicken into 1.5-inch pieces, season with salt and garlic powder, then coat with cornstarch.
  • Fry chicken in hot oil until golden and crispy, about 4-6 minutes per side. Drain on paper towels.
  • Stir-fry onions, bell pepper, and pineapple for 30-45 seconds, then add sauce and simmer until thickened.
  • Add fried chicken to the sauce, toss to coat, garnish with green onions and sesame seeds, then serve.

Notes

For extra crispiness, increase frying time or use an air fryer.
