A flavorful and easy one-pan meal featuring tender chicken, crispy potatoes, and a fragrant garlic butter sauce.

Ingredients

Chicken

  • 2 lbs Boneless, Skinless Chicken Thighs (cut into 1.5-inch pieces)
  • 2 tbsp Olive Oil (divided)
  • 1 tsp Smoked Paprika
  • 0.5 tsp Dried Thyme
  • 0.5 tsp Garlic Powder
  • Salt and Freshly Ground Black Pepper Salt and Black Pepper (to taste)
  • 1.5 lbs Small Red or Yukon Gold Potatoes (cut into 1-inch pieces)
  • 0.5 tsp Onion Powder
  • 6 tbsp Unsalted Butter (divided)
  • 8-10 cloves Garlic (minced)
  • 0.25 cup Chicken Broth
  • 2 tbsp Fresh Lemon Juice
  • 0.25 cup Fresh Parsley (chopped)
  • 1 tsp Red Pepper Flakes (optional)

Instructions 

  • Pat chicken dry and toss with 1 tbsp olive oil, paprika, thyme, garlic powder, salt, and pepper.
  • Toss potatoes with 1 tbsp olive oil, onion powder, salt, and pepper.
  • Cook potatoes in butter until golden and crispy, then transfer to a plate.
  • Cook chicken in butter until golden and cooked through, then set aside.
  • Sauté garlic and red pepper flakes in remaining butter, then deglaze with broth. Add lemon juice and simmer.
  • Return chicken and potatoes to skillet, toss with sauce, garnish with parsley, and serve.

Notes

Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
