Delicious and wholesome raspberry crumble bars with a crunchy oat and almond base topped with a sweet raspberry filling.

Ingredients

Oats and Nuts

  • 3 cups rolled oats
  • 1/2 cup almonds, unsalted
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup butter or coconut oil
  • 1/3 cup honey
  • 2 1/2 cups raspberries, fresh or frozen
  • 1 teaspoon vanilla extract
  • 1 lemon zested
  • 1 tablespoon tapioca flour or arrowroot starch or flour
  • 2 tablespoons honey

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8 or 9x9 inch pan with parchment.
  • Pulse 2 1/2 cups oats and all almonds until ground into flour.
  • Mix ground oats, remaining oats, baking powder, cinnamon, and salt. Add cold butter and honey; stir until sticky.
  • Press two-thirds of dough into pan; set aside. Cook raspberries, vanilla, lemon zest, salt, and honey until liquidy, then add tapioca and thicken.
  • Spread raspberry mixture over base, top with remaining dough, and bake 30-35 mins until bubbling and golden.
  • Cool completely before slicing into 9 bars. Store in fridge up to 5 days or freeze for a month.

Notes

For best results, use fresh or frozen raspberries and ensure the raspberry mixture thickens properly.
