Delicious and wholesome raspberry crumble bars with a crunchy oat and almond base topped with a sweet raspberry filling.
Ingredients

butter or coconut oil

honey

raspberries, fresh or frozen

tapioca flour or arrowroot starch or flour

Instructions
Preheat oven to 350°F (175°C) and line an 8x8 or 9x9 inch pan with parchment.
Pulse 2 1/2 cups oats and all almonds until ground into flour.
Mix ground oats, remaining oats, baking powder, cinnamon, and salt. Add cold butter and honey; stir until sticky.
Press two-thirds of dough into pan; set aside. Cook raspberries, vanilla, lemon zest, salt, and honey until liquidy, then add tapioca and thicken.
Spread raspberry mixture over base, top with remaining dough, and bake 30-35 mins until bubbling and golden.
Cool completely before slicing into 9 bars. Store in fridge up to 5 days or freeze for a month.
Notes
For best results, use fresh or frozen raspberries and ensure the raspberry mixture thickens properly.
