Delicious and tangy raspberry yogurt bars with a crunchy oat crust, perfect for a sweet treat or dessert.
Ingredients
Crust and topping

all-purpose flour

rolled oats

light brown sugar

baking powder

salt

unsalted butter
(room temperature)
Zest from a lemon
lemon zest

vanilla extract

Greek yogurt

Instructions
Preheat oven to 350F (180C). Line an 8x8 inch (20x20cm) pan with parchment paper.
Mix lemon zest with brown sugar, then add flour, oats, baking powder, salt, butter, and vanilla. Reserve 1 cup of crumble.
Press remaining crumble into the pan base. Mix yogurt with sugar and cornstarch, then spread over crust.
Distribute raspberries over the yogurt layer, then sprinkle reserved crumble on top.
Bake for 40-45 minutes until lightly browned. Cool, refrigerate 2 hours before serving.
Notes
For best results, chill the bars before serving to set.
