Ingredients

Protein

  • 2 cups Cooked Chicken (shredded or diced)

Dairy

  • 1 cup Plain Greek Yogurt

Condiments & Spices

  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Garlic Powder (or fresh garlic)
  • 1 teaspoon Onion Powder (or finely chopped onions)
  • to taste Salt
  • to taste Pepper

Vegetables & Fruits

  • 1 cup Celery (diced)
  • 1 cup Red Grapes (halved; or diced apples)
  • 1 cup Chopped Bell Peppers (for color and crunch)
  • 1 cup Diced Cucumbers (for extra crunch)
  • 1 cup Carrots (shredded)
  • 1/2 cup Walnuts (chopped; or almonds)

Instructions 

  • Combine shredded chicken, Greek yogurt, mustard, lemon juice, garlic powder, onion powder, salt, and pepper in a large bowl.
  • Add diced celery, grapes, bell peppers, cucumbers, carrots, and chopped nuts; mix well.
  • Garnish with fresh parsley if desired and serve immediately.

Notes

For extra flavor, chill the salad for 10 minutes before serving.
