Instructions
Heat 1 tablespoon of oil in a large skillet. Cook chicken until browned, then remove.
Melt 2 tablespoons of butter in the same skillet, sauté onion until translucent.
Add vegetables and cook until heated through. Push to one side, scramble eggs on the other side, then mix.
Add rice, soy sauce, remaining butter, and lemon juice. Stir to combine.
Return chicken to skillet, mix well, and season with salt and pepper. Serve hot, garnished with sesame seeds if desired.
Notes
Use day-old rice for best results and ensure chicken is cooked thoroughly.
