A flavorful and easy-to-make chicken fried rice that captures the authentic restaurant taste with simple ingredients.

Ingredients

Seasonings

  • 1.5 teaspoons salt
  • 4 teaspoons neutral oil (like avocado or canola) (divided as 1 tablespoon + 1 teaspoon)
  • 0.75 pound chicken breasts (cut into very small pieces)
  • 5 tablespoons low-sodium soy sauce (divided)
  • 4 tablespoons butter (divided)
  • 2 teaspoons fresh lemon juice
  • Salt to taste Salt

  • 0.5 cup diced white onion
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 2 large eggs
  • 4 cups cooked rice, cooled to touch

Garnish (optional)

  • Sesame seeds Sesame seeds (optional, for garnish)

Instructions 

  • Heat 1 tablespoon of oil in a large skillet. Cook chicken until browned, then remove.
  • Melt 2 tablespoons of butter in the same skillet, sauté onion until translucent.
  • Add vegetables and cook until heated through. Push to one side, scramble eggs on the other side, then mix.
  • Add rice, soy sauce, remaining butter, and lemon juice. Stir to combine.
  • Return chicken to skillet, mix well, and season with salt and pepper. Serve hot, garnished with sesame seeds if desired.

Notes

Use day-old rice for best results and ensure chicken is cooked thoroughly.
