A delicious and hearty roasted chicken baguette with fresh vegetables and cheese, perfect for a quick lunch or dinner.

Ingredients

Protein

  • 550-700 g Hazeldenes Free Range Chicken Breast Fillets
  • 190 g Sacla Pasta Sauce Stir Through Capsicum and Eggplant
  • 200 g Harris Farm Char Grilled Capsicum Strips
  • 125 g Sori Buffalo Mozzarella Cheese

Other

  • 1 piece Baguette
  • 4 tbsp Capsicum and Eggplant Stir Through Sauce (Sacla)
  • 4 tbsp Rocket Pesto
  • 50 g Rocket and Spinach Salad
  • 150 g Grilled Capsicum Strips (HFM)
  • ½ tsp Sea Salt
  • ¼ tsp Pepper

Instructions 

  • Preheat the BBQ grill on high heat.
  • Slice the baguette in half and char grill for 3-5 minutes until golden and charred.
  • Spread capsicum and eggplant sauce on one side and rocket pesto on the other.
  • Add salad, capsicum, mozzarella, and chicken inside the baguette, then sprinkle with salt and pepper. Top with the other half.
  • Cut into 4 pieces and serve.

Notes

For best results, use fresh ingredients and char grill the baguette for added flavor.
