Ingredients

  • 4 to 5 pounds Whole Chicken
  • 2 medium-sized fresh lemons (washed and sliced)
  • 6 cloves fresh garlic (peeled and chopped)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons chopped fresh herbs (rosemary or thyme)
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions 

  • Preheat oven to 425°F (220°C). Prepare ingredients and marinate the chicken with half the mixture, then rest for 30 minutes.
  • Place the chicken breast side up in a roasting pan and roast for 60-75 minutes until internal temperature reaches 165°F (74°C).
  • Remove from oven and let rest for 10-15 minutes before carving.
