A flavorful and easy-to-make roasted chicken with crispy potatoes infused with garlic and herbs, perfect for a comforting meal.

Instructions
Preheat oven to 400°F (200°C).
Toss potatoes with 1 tbsp olive oil, salt, pepper, and half of the garlic. Arrange on a baking sheet.
Rub chicken with remaining olive oil, garlic, rosemary, thyme, salt, and pepper. Place on the sheet with potatoes.
Squeeze lemon over chicken and potatoes, then roast for 40-45 minutes.
Let rest for 5 minutes, then garnish with parsley before serving.

Ensure chicken reaches an internal temperature of 165°F for safety.
