A flavorful and easy-to-make roasted chicken with crispy potatoes infused with garlic and herbs, perfect for a comforting meal.

Ingredients

Protein

  • 4 pieces bone-in, skin-on chicken thighs

Vegetables

  • 6 medium potatoes (peeled and cubed)

Aromatics & Oils

  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • to taste Salt and pepper Salt and pepper
  • 1 lemon lemon, halved

Garnish

  • optional Fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with 1 tbsp olive oil, salt, pepper, and half of the garlic. Arrange on a baking sheet.
  • Rub chicken with remaining olive oil, garlic, rosemary, thyme, salt, and pepper. Place on the sheet with potatoes.
  • Squeeze lemon over chicken and potatoes, then roast for 40-45 minutes.
  • Let rest for 5 minutes, then garnish with parsley before serving.

Notes

Ensure chicken reaches an internal temperature of 165°F for safety.
