Ingredients

  • 2 lbs sweet potatoes (scrubbed, pat dried, skin on)
  • 2 Tbsp avocado oil or olive oil
  • 1 1/2 tsp smoked paprika
  • 1 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 large ripe avocado
  • 2 cloves garlic (minced)
  • 1/2 tsp Dijon mustard
  • 1-2 Tbsp fresh lemon juice (plus more to taste)
  • 1/4 cup plain Greek yogurt
  • Pinch red pepper flakes optional

Additional

  • to taste kosher salt and black pepper

Instructions 

  • Preheat oven to 450°F (230°C). Line a baking sheet with parchment.
  • Cut sweet potatoes into 1-inch wide wedges. Toss with oil and seasonings.
  • Arrange wedges on the baking sheet in a single layer. Roast for 20 minutes, flip, then roast another 5-8 minutes until crispy.
  • Optional: broil for a few minutes for extra crispness. Serve with avocado sauce.

Notes

For extra crispiness, flip the wedges halfway through roasting and broil briefly at the end.
