A flavorful focaccia topped with fresh grapes and aromatic rosemary, perfect for a delightful snack or appetizer.

Ingredients

Dough

  • 1/4 cup olive oil
  • 2 teaspoons rosemary, fresh preferred, chopped
  • 3/4 cup water, warm
  • 2 teaspoons instant yeast or active dry yeast
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1 1/4 teaspoons table salt
  • 3 cups King Arthur Unbleached All-Purpose Flour

Grapes

  • 1 1/4 pounds seedless red grapes (about 80 grapes)
  • 2 tablespoons olive oil (for drizzling)

Garnish

  • fresh rosemary sprigs (optional, for garnish)

Instructions 

  • Mix all dough ingredients until a soft dough forms. Knead for 6 minutes by mixer or 8 minutes by hand until smooth.
  • Let the dough rise in a greased bowl, covered, for 1-2 hours until doubled.
  • Wash and drain grapes. Preheat oven to 375°F (190°C). Oil an 18x13 inch baking sheet.
  • Press dough into the pan, let rest 10 minutes if it snaps back. Drizzle with olive oil, arrange grapes, then let rise covered for 30 minutes.
  • Gently press grapes into dough, cover, and rise another 30 minutes. Bake for 23-27 minutes until golden brown. Garnish with rosemary and serve warm.

Notes

Store leftovers wrapped at room temperature for a couple of days or freeze for longer storage.
