A deliciously cheesy and flavorful stuffed chicken breast recipe inspired by Ruth’s Chris, perfect for a satisfying dinner.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • ¼ cup grated Parmesan cheese

Instructions 

  • Preheat oven to 375°F (190°C). Cut pockets in chicken breasts.
  • Mix cream cheese, spinach, mozzarella, garlic powder, and Italian seasoning. Stuff chicken and secure with toothpicks.
  • Sear stuffed chicken in olive oil for 3-4 minutes per side until golden.
  • Pour broth, add lemon juice, and bake uncovered for 25-30 minutes until internal temp reaches 165°F (75°C).
  • Remove from oven, sprinkle Parmesan, and rest for 5 minutes before serving.

Notes

Secure the stuffing with toothpicks to prevent spilling during cooking.
