Ingredients
Crust
1/2cupsalted vegan butter (melted)
1/4cupgranulated sugar
1/2teaspoonpure vanilla extract
1cupall purpose flour
Apple Filling
2largehoney crisp or granny smith apples (peeled and thinly sliced)
2tablespoonsgranulated sugar
2tablespoonsall purpose flour
1teaspoonground cinnamon
1/8teaspoonground nutmeg (optional)
Topping
1/2cuprolled oats
1/4cupall purpose flour
5tablespoonsbrown sugar
1/4teaspoonground cinnamon
4tablespoonssalted vegan butter, cold

Instructions
Preheat oven to 300°F, line an 8-inch pan with parchment.
Mix melted butter, sugar, vanilla; add flour and press into pan. Bake for 15 minutes at 300°F, then increase oven to 350°F.
Combine apples, sugar, flour, cinnamon, nutmeg; set aside.
Mix oats, flour, brown sugar, cinnamon; cut in cold vegan butter until crumbly. Layer apple filling over crust, sprinkle topping, and bake for 30-35 minutes until golden.
Cool for 30 minutes, chill for 1 hour if desired. Lift out using parchment, cut into squares, drizzle with salted caramel before serving.
Notes
For best results, chill the bars before serving and drizzle with vegan salted caramel for extra flavor.
