Salted Caramel Chocolate Chip Cookies

Delight in these soft-baked cookies filled with gooey caramel and chocolate chips, perfect for satisfying sweet cravings.

Ingredients

Dough

  • 14.5 tbsp salted butter, melted cooled slightly
  • 3 4 cup dark brown sugar, packed
  • 3 4 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 2 large eggs, at room temperature
  • 3 cups all-purpose flour, spooned leveled or weighed
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt

Add-ins

  • 2 cups semi-sweet chocolate chips
  • 35 pieces Werther's soft caramels (See note below)

Instructions 

  • Unwrap caramels, leaving 15 whole for stuffing; slice the rest into 2-3 pieces for topping.
  • Melt butter, whisk in sugars, vanilla, and eggs until smooth. Add dry ingredients and stir until dough forms. Mix in chocolate chips.
  • Rest dough in fridge or freezer for 20 minutes. Form 90g balls, flatten, place a caramel inside, and wrap. Top with sliced caramel pieces and extra chocolate chips.
  • Preheat oven to 365°F (185°C). Place dough balls on parchment-lined sheets, leaving space. Bake for 10-12 minutes, then swirl cookies into circles with a cutter.
  • Cool cookies on pan until not too hot. Store in airtight container for 4-5 days or rewarm for serving. Freeze unbaked dough balls for 2-3 months.

Notes

Cookies can be baked straight from frozen; make-ahead dough can be stored in the fridge for 2-3 days.
