Dough
14.5tbspsalted butter, melted cooled slightly
3 4cupdark brown sugar, packed
3 4cupgranulated sugar
1 1/2tspvanilla extract
2largeeggs, at room temperature
3cupsall-purpose flour, spooned leveled or weighed
1tspbaking powder
1tspbaking soda
1/4tspsalt

2cupssemi-sweet chocolate chips
35piecesWerther's soft caramels(See note below)
Instructions
Unwrap caramels, leaving 15 whole for stuffing; slice the rest into 2-3 pieces for topping.
Melt butter, whisk in sugars, vanilla, and eggs until smooth. Add dry ingredients and stir until dough forms. Mix in chocolate chips.
Rest dough in fridge or freezer for 20 minutes. Form 90g balls, flatten, place a caramel inside, and wrap. Top with sliced caramel pieces and extra chocolate chips.
Preheat oven to 365°F (185°C). Place dough balls on parchment-lined sheets, leaving space. Bake for 10-12 minutes, then swirl cookies into circles with a cutter.
Cool cookies on pan until not too hot. Store in airtight container for 4-5 days or rewarm for serving. Freeze unbaked dough balls for 2-3 months.
Notes
Cookies can be baked straight from frozen; make-ahead dough can be stored in the fridge for 2-3 days.
