A quick and flavorful dish combining tender chicken, sweet apples, and fragrant rosemary for a satisfying meal.

Ingredients

Dairy and Oils

  • 0.5 tablespoon unsalted butter
  • 0.5 tablespoon extra-virgin olive oil

Produce

  • 1 small sweet onion (thinly sliced (about 1 cup))
  • 2 small red apples (sliced)

Meat

  • 1.5 pounds boneless (skinless chicken breasts) (cut into 1-inch strips)

Herbs and Spices

  • 1 heaping tablespoon fresh rosemary (finely chopped, divided)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Condiments

  • 2 tablespoons apple cider vinegar

Instructions 

  • Heat butter and oil in a large saute pan over medium-high heat.
  • Add onion and apple slices; saute 4-5 minutes until softened and browned.
  • Season chicken with 2 teaspoons rosemary, salt, and pepper.
  • Push onion and apples aside; cook chicken until browned, 6-8 minutes.
  • Add vinegar and remaining rosemary; cover and cook 3-5 minutes until chicken is done.
  • Serve with pan juices and enjoy!

Notes

Use fresh rosemary for the best flavor.
