A flavorful and easy chicken fried rice recipe perfect for a quick weeknight dinner.

cooked white rice (day-old, cold)

boneless (skinless chicken breast, diced)

vegetable oil (divided)

large eggs
beaten eggs

frozen peas and carrots (thawed)

onion (finely diced)

garlic (minced)

soy sauce

oyster sauce (optional)

Instructions
Heat 1 tbsp oil; cook chicken for 4-5 minutes. Remove.
Add 1/2 tbsp oil; scramble eggs for 1-2 minutes. Remove.
Add 1/2 tbsp oil; cook onion, garlic, peas, and carrots for 2-3 minutes.
Add rice; stir-fry for 3-4 minutes. Return chicken and eggs; add sauces and pepper. Stir-fry 2 minutes.
Garnish with green onions and sesame seeds. Serve hot.
Notes
Use day-old rice for best results. Feel free to add other vegetables or adjust sauces to taste.
