A delicious savory tart combining sweet apples, caramelized onions, and sharp cheddar for a perfect appetizer or main dish.
Ingredients
Dough

sticks
unsalted butter
(cut into small pieces, and freeze until firm)
2 2/3

all-purpose flour
(plus more for dusting)

egg plus 1 egg yolk
egg and yolk

ice water
(plus 3 Tbs.)

unsalted butter

Tbs.
extra-virgin olive oil
2
yellow onions
sliced into thin rings

sour cream

Dijon mustard

shredded sharp cheddar cheese

fresh thyme leaves
(plus more for garnish (optional))

cored, partially peeled, and thinly sliced
Salt and pepper
Instructions
Combine butter, flour, and salt in a food processor; pulse until coarse.
Whisk egg, yolk, and ice water; drizzle into processor to form dough. Chill for 1 hour.
Roll dough, fit into baking sheet, fold edges, and freeze 30 minutes.
Bake crust at 375°F (190°C) for 25 minutes, then cool slightly and reduce oven to 350°F (180°C).
Caramelize onions in butter and olive oil until browned, about 8 minutes per side.
Spread sour cream mixture on crust, top with cheese, thyme, apples, onions, remaining cheese, salt, and pepper. Bake until golden, about 25 minutes.
Notes
For best results, chill the dough thoroughly and slice apples thinly for even cooking.
