Ingredients

Main Ingredients

  • 2 pounds beef chuck roast or stew meat (cut into 2-inch cubes)
  • 8 ounces mushrooms (sliced cremini, button, or your choice)
  • 2 medium onions (diced)
  • 4 carrots carrots (cut into thin matchsticks)
  • 0.5 cup canola oil (or another neutral oil)
  • 3 cups jasmine rice (rinsed until water runs clear)
  • 4 cups water or beef broth (if preferred)
  • 1 head garlic (sliced horizontally to expose cloves)

Spice Blend

  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 teaspoons seasoned salt
  • 1.5 teaspoons regular salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika

Instructions 

  • Heat a Dutch oven, sear beef for 8-10 minutes until browned, then simmer in water for 1 hour until tender.
  • Remove beef, strain cooking liquid to 4 cups, set aside.
  • Sauté onions, carrots, and mushrooms in oil for 10-12 minutes, add garlic and cook 1 minute.
  • Return beef, add spices, and stir to coat vegetables and meat evenly.
  • Spread rinsed rice over the mixture, pour broth over rice, then bring to a boil, cover, and simmer 30 minutes. Rest 10 minutes before serving.

Notes

Ensure rice is rinsed well to prevent clumping and absorb flavors better.
