Cooked Chicken Breast

Fat-Free Cottage Cheese

  • 1 cup Fat-Free Cottage Cheese (Blended smooth.)

Frozen Mixed Vegetables

  • 2 cups Frozen Mixed Vegetables (Corn, peas, carrots.)

Chicken Broth

  • 1 cup Chicken Broth (Low-sodium preferred.)

Medium Onion

  • 1 medium Onion (Diced.)

Garlic Powder

  • 1 teaspoon Garlic Powder

Dried Thyme

  • 1 teaspoon Dried Thyme

Olive Oil

  • 1 tablespoon Olive Oil (For sautéing.)

Instructions 

  • Roast the sweet potatoes at 400°F (200°C) for 45 minutes until tender.
  • Sauté diced onion in olive oil until translucent, then add garlic powder and thyme.
  • Add cooked chicken, mixed vegetables, and chicken broth; simmer until heated through.
  • Cut roasted sweet potatoes in half and scoop out some flesh to create a cavity.
  • Mix the scooped sweet potato flesh with the cottage cheese and season with salt and pepper.
  • Fill the sweet potato halves with the chicken and vegetable mixture, then serve.
