Ingredients

  • 1 whole chicken (about 4-5 lbs)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt, adjust to taste
  • 0.5 teaspoon black pepper
  • 1 lemon quartered

Instructions 

  • Preheat oven to 425°F (220°C). Pat chicken dry and place in a roasting pan.
  • Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub all over the chicken and stuff lemon quarters inside.
  • Roast for 75 minutes until internal temperature reaches 165°F (75°C) and skin is golden.
  • Rest for 10-15 minutes, garnish with herbs, and serve warm.
