Instructions
Preheat oven to 425°F (220°C). Pat chicken dry and place in a roasting pan.
Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub all over the chicken and stuff lemon quarters inside.
Roast for 75 minutes until internal temperature reaches 165°F (75°C) and skin is golden.
Rest for 10-15 minutes, garnish with herbs, and serve warm.
