Instructions 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced chicken, salt, and pepper; cook until browned and cooked through.
  • Add minced garlic and Italian seasoning; cook for 1 minute until fragrant.
  • In a bowl, whisk together flour and water to make a slurry. Add to the skillet along with heavy cream, chicken broth, sun-dried tomatoes, and Parmesan cheese. Simmer until sauce thickens.
  • Stir in cooked pasta and spinach; cook until spinach wilts. Serve hot.

Notes

For a lighter version, use half-and-half instead of heavy cream.
