Instructions
Heat oil in a large pan.
Add chopped onion and cook until golden.
Add minced beef, cook until browned, then stir in vegetables and seasonings.
Pour in stock, add bay leaves, cover, and simmer until veggies are tender.
Stir in gravy granules, season, and cook for 5 minutes. Serve over mashed potatoes.
