A delicious and easy-to-make layered chicken burrito recipe perfect for a quick dinner.

Ingredients

Protein

  • 3.5 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
  • 0.5 cup salsa
  • 1 teaspoon chili powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • pinch to taste salt
  • 15 oz black beans, rinsed and drained
  • 0.33 cup jarred salsa
  • 2 cups hot cooked rice
  • 1 tablespoon melted butter
  • 1 tablespoon fresh lime juice
  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (for serving)
  • to taste Fresh cilantro, chopped (for serving, optional)

Instructions 

  • Season chicken with spices, sauté in oil, stir in salsa.
  • Rinse beans, heat with salsa and spices.
  • Mix rice with butter and lime juice.
  • Layer chicken, beans, rice, cheeses in tortillas, roll up.
  • Place burritos seam-side down, top with salsa or sour cream, bake at 375°F (190°C) for 30 minutes.

Notes

For extra flavor, add chopped cilantro before serving.
