A flavorful and easy-to-make seafood dish featuring shrimp, sausage, corn, and potatoes all roasted together on a sheet pan.

Ingredients

Vegetables

  • 1 pound baby Dutch yellow potatoes
  • 3 ears corn (each cut crosswise into 6 pieces)
  • 1 tablespoon Old Bay seasoning

Dairy

  • 1/4 cup unsalted butter (melted)

Seafood

  • 4 cloves garlic (minced)
  • 1 pound medium shrimp (peeled and deveined)
  • 1 (12.8-ounce) package smoked andouille sausage (thinly sliced)

Fruits

  • 1 lemon cut into wedges
  • 2 tablespoons chopped fresh parsley leaves

Instructions 

  • Preheat oven to 400°F (200°C). Lightly oil a baking sheet.
  • Cook potatoes in boiling salted water for 10-13 minutes; add corn in last 5 minutes, then drain.
  • Mix melted butter, garlic, and Old Bay seasoning in a small bowl.
  • Arrange potatoes, corn, shrimp, and sausage on the sheet; toss with butter mixture.
  • Bake for 12-15 minutes until shrimp are opaque and corn is tender. Serve with lemon wedges and parsley.

Notes

For extra flavor, sprinkle with additional parsley or serve with hot sauce.
