A quick and refreshing couscous salad perfect for a light lunch or side dish, packed with fresh vegetables and zesty lemon flavor.

Instructions
Bring vegetable stock to a boil and pour over couscous. Cover and let sit for 5 minutes, then fluff with a fork.
In a large bowl, combine diced tomatoes, cucumber, red pepper, spring onions, and defrosted sweetcorn.
Add cooked couscous to the vegetables. Mix in crushed garlic, olive oil, lemon juice, salt, and pepper.
Drizzle with extra virgin olive oil and toss to combine. Garnish with chopped coriander before serving.
Notes
For extra flavor, let the salad sit for 15 minutes before serving to allow the flavors to meld.
