A creamy and flavorful Tuscan chicken pasta that combines tender chicken, sun-dried tomatoes, spinach, and Parmesan for a satisfying meal.

Ingredients

Protein

  • 1.25 lb chicken (cut into 1-inch pieces)

Oil

  • 3 tbsp olive oil

Spices

  • 1.25 tsp paprika
  • 1.25 tsp garlic powder
  • 1.25 tsp salt
  • 0.75 tsp pepper

Pasta

  • 8 oz rigatoni

Dairy

  • 5 tbsp butter (Kerrygold unsalted)
  • 0.25 cup shallot (finely minced)
  • 0.33 cup sun-dried tomatoes (chopped)
  • 1.5 tsp garlic (minced)
  • 2 tbsp tomato paste
  • 1 tsp oregano
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1.5 cups heavy cream
  • 1.5 cups milk
  • 1.5 cups spinach
  • 1 cup Parmesan cheese (freshly grated)
  • 1 cup cherry tomatoes (halved)

Instructions 

  • Sauté chicken pieces in olive oil until cooked through and browned.
  • Cook rigatoni until al dente, then drain and set aside.
  • In the same pan, melt butter and sauté shallots, sun-dried tomatoes, and garlic.
  • Add tomato paste, oregano, paprika, garlic powder, salt, and pepper; cook briefly.
  • Pour in heavy cream and milk, then add spinach; simmer until sauce thickens.
  • Combine cooked chicken, pasta, Parmesan, and cherry tomatoes; toss to combine.

Notes

For extra flavor, sprinkle additional Parmesan on top before serving.
