Instructions
Sauté chicken pieces in olive oil until cooked through and browned.
Cook rigatoni until al dente, then drain and set aside.
In the same pan, melt butter and sauté shallots, sun-dried tomatoes, and garlic.
Add tomato paste, oregano, paprika, garlic powder, salt, and pepper; cook briefly.
Pour in heavy cream and milk, then add spinach; simmer until sauce thickens.
Combine cooked chicken, pasta, Parmesan, and cherry tomatoes; toss to combine.
Notes
For extra flavor, sprinkle additional Parmesan on top before serving.
