Ingredients

Wet ingredients

  • 1/2 cup oat milk (Unsweetened, 120 ml)
  • 1/2 teaspoon apple cider vinegar

Dry ingredients

  • 1/4 cup melted vegan butter (Measure then melt, 57 grams)
  • 1/3 cup unsweetened natural apple sauce (78 grams)
  • 1/2 cup vegan cane sugar (100 grams plus extra for topping)
  • 2 teaspoons vanilla extract (3-4 teaspoons for more flavor)
  • 1 1/2 cups all purpose unbleached flour (188 grams)
  • 2 teaspoons baking powder
  • 1 pinch salt

Instructions 

  • Mix oat milk and vinegar; set aside for 5 minutes.
  • Whisk wet ingredients: oat milk mixture, melted butter, apple sauce, sugar, and vanilla.
  • Fold in dry ingredients: flour, baking powder, salt until just combined.
  • Divide batter into 7 greased muffin holes; sprinkle with sugar if desired.
  • Bake at 375°F (190°C) for 22 minutes until golden.

Notes

Ensure not to overmix the batter for fluffy muffins.
