Ingredients

Dairy and Oils

  • 3 tablespoons unsalted butter (or oil)

Protein

  • 1 pound boneless and skinless chicken breasts or thighs (pounded thin or butterflied)

Vegetables

  • 1 onion diced onion
  • 2 cloves garlic, chopped

Spices and Herbs

  • 1/2 teaspoon dried thyme (or 1 teaspoon fresh thyme, chopped)
  • 1/2 teaspoon dried rosemary (or 1 teaspoon fresh rosemary, chopped)
  • 1/2 teaspoon ground sage (or 1 teaspoon fresh sage, chopped)

Thickening Agent

  • 3 tablespoons flour (gluten-free for gluten-free)

Broth and Seasonings

  • 2 cups chicken broth
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon garlic powder (optional)

Salt and Pepper

Instructions 

  • Melt butter in a skillet, cook chicken until golden and cooked through, then set aside.
  • Cook diced onion until tender, then add garlic, herbs, and flour; cook for 1 minute.
  • Pour in broth, add seasonings, bring to a boil, then simmer until gravy thickens, about 3 minutes.
  • Season with salt and pepper, add chicken back to skillet, and cook for 5 minutes.

Notes

For extra flavor, use fresh herbs and adjust seasoning to taste.
