Instructions
Heat olive oil in a large skillet over medium-high heat. Cook steak strips until browned, then remove and set aside.
Sauté onion and garlic until softened, then add bell peppers and cook until tender.
Stir in diced tomatoes, green chilies, cream cheese, heavy cream, Cajun seasoning, salt, and pepper. Simmer until smooth.
Add cooked pasta and toss to coat. Stir in steak and 1.5 cups cheddar cheese. Top with remaining cheese, cover, and melt.
Garnish with chopped green onions and serve hot.
Notes
For extra flavor, sprinkle additional green onions or hot sauce before serving.
