A hearty and flavorful stew featuring tender beef simmered in Guinness with vegetables and herbs, perfect for a comforting meal.

Ingredients

Dried ingredients

  • 3 tbsp plain, all purpose flour
  • 1.2 kg chuck steak, cut into large chunks
  • 3 tbsp olive oil (plus extra if needed)
  • 2 pcs brown onions, sliced
  • 4 cloves garlic, crushed
  • 3 large carrots, cut into large chunks
  • 2 pcs parsnips, cut into large chunks
  • 330 ml Guinness
  • 750 ml beef stock
  • 2 tbsp tomato paste
  • 2 tsp porcini powder
  • 3 pcs bay leaves
  • 2 sprigs rosemary
  • 3 sprigs thyme
  • 200 g mushrooms
  • 2 tbsp Worcestershire sauce
  • to taste sea salt flakes
  • to taste freshly cracked pepper

Instructions 

  • Preheat oven to 150°C/300°F. Coat beef in flour and brown in batches with oil.
  • Sauté onions until translucent, add garlic, then return beef to the pot.
  • Add vegetables, Guinness, stock, tomato paste, porcini powder, and herbs. Simmer, then bake for 3 hours.
  • Add mushrooms and bake for another 30 minutes. Season with Worcestershire, salt, and pepper before serving.

Notes

This stew tastes even better the next day, allowing flavors to meld.
