A hearty and flavorful slow cooker pot roast infused with apple cider, herbs, and tender vegetables. Perfect for a comforting family meal.

Ingredients

Meat

  • 3 lbs beef chuck roast
  • 1 tsp salt
  • ΒΌ tsp pepper

Cooking liquids

  • 1 cup apple cider
  • 1 cup beef broth
  • 2 Tbsp Worcestershire sauce
  • 4 cloves garlic (Minced)
  • 1 Tbsp tomato paste
  • 1 Tbsp dijon mustard
  • 2 tsp chopped fresh rosemary (or 1 teaspoon dried)
  • 2 tsp chopped fresh thyme leaves (or 1 teaspoon dried)

Vegetables

  • 1 lbs baby carrots
  • 1 lbs baby potatoes (halved or quartered depending on size)

Instructions 

  • Season the beef with salt and pepper. Sear in hot oil until browned on all sides, then set aside.
  • Whisk together apple cider, beef broth, Worcestershire sauce, garlic, tomato paste, mustard, rosemary, and thyme.
  • Place carrots and potatoes in slow cooker, add seared beef on top, then pour the liquid mixture over.
  • Cover and cook on LOW for 8-10 hours or HIGH for 5-6 hours until beef is tender.
  • Rest the beef, then slice or shred. Serve with vegetables and some cooking liquid, garnished with herbs.

Notes

For extra flavor, add fresh parsley or rosemary as garnish before serving.
