baby potatoes (halved or quartered depending on size)
Instructions
Season the beef with salt and pepper. Sear in hot oil until browned on all sides, then set aside.
Whisk together apple cider, beef broth, Worcestershire sauce, garlic, tomato paste, mustard, rosemary, and thyme.
Place carrots and potatoes in slow cooker, add seared beef on top, then pour the liquid mixture over.
Cover and cook on LOW for 8-10 hours or HIGH for 5-6 hours until beef is tender.
Rest the beef, then slice or shred. Serve with vegetables and some cooking liquid, garnished with herbs.
Notes
For extra flavor, add fresh parsley or rosemary as garnish before serving.
