A tender and flavorful roast beef glazed with a rich balsamic sauce, perfect for a comforting meal.

Ingredients

Meat and Vegetables

  • 4 pounds beef chuck roast
  • 1 cup beef broth
  • 1/3 cup balsamic vinegar
  • 2 tablespoons soy sauce
  • 1/2 pound mushrooms
  • 2 tablespoons honey
  • 1/4 teaspoon red pepper flakes
  • 4 cloves garlic, peeled and chopped
  • 1/4 teaspoon black pepper, freshly ground
  • cups cooking liquid from the roast, strained
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 3 tablespoons balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • to taste salt and black pepper

Instructions 

  • Grease slow cooker and add beef and mushrooms.
  • Mix beef broth, balsamic vinegar, soy sauce, honey, red pepper flakes, garlic, and black pepper; pour over beef and mushrooms.
  • Cook on low for 6-8 hours until tender.
  • Remove beef, slice, and set aside. Strain cooking liquid and prepare glaze with cornstarch, balsamic vinegar, brown sugar, and soy sauce; simmer until thickened.
  • Pour glaze over sliced beef and serve hot.

Notes

For extra flavor, marinate the beef overnight.
