4poundsbeef chuck roast
1cupbeef broth
1/3cupbalsamic vinegar
2tablespoonssoy sauce
1/2poundmushrooms
2tablespoonshoney
1/4teaspoonred pepper flakes
4clovesgarlic, peeled and chopped
1/4teaspoonblack pepper, freshly ground
1½cupscooking liquid from the roast, strained
2tablespoonscornstarch
2tablespoonswater
3tablespoonsbalsamic vinegar
1/4cupbrown sugar
1tablespoonsoy sauce
to tastesalt and black pepper
Instructions
Grease slow cooker and add beef and mushrooms.
Mix beef broth, balsamic vinegar, soy sauce, honey, red pepper flakes, garlic, and black pepper; pour over beef and mushrooms.
Cook on low for 6-8 hours until tender.
Remove beef, slice, and set aside. Strain cooking liquid and prepare glaze with cornstarch, balsamic vinegar, brown sugar, and soy sauce; simmer until thickened.
