Instructions
Season chicken with salt and pepper, then place into slow cooker with remaining ingredients except mushrooms.
Cook on low for 6-8 hours; add mushrooms in last 30 minutes.
Shred cooked chicken, then prepare a roux with butter and flour in a saucepan.
Whisk in milk and half and half, cook until slightly thickened, then stir into slow cooker.
Adjust thickness with more half and half if needed, then serve garnished with parsley.
Notes
For a creamier soup, add more half and half to reach desired consistency.
