A hearty and comforting soup combining tender chicken, wild rice, and vegetables, perfect for a cozy meal.

Ingredients

Protein

  • 1.5 pounds boneless skinless chicken breasts
  • 6 cups chicken stock
  • 1 cup wild rice
  • 3 cloves garlic (minced)
  • 1 onion diced onion
  • 3 carrots peeled and diced carrots
  • 3 stalks celery (diced)
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried rosemary
  • 1 pound cremini mushrooms (thinly sliced)
  • 0.25 cup unsalted butter
  • 0.25 cup all-purpose flour
  • 1 cup milk
  • 1 cup half and half
  • 2 tablespoons chopped fresh parsley

Instructions 

  • Season chicken with salt and pepper, then place into slow cooker with remaining ingredients except mushrooms.
  • Cook on low for 6-8 hours; add mushrooms in last 30 minutes.
  • Shred cooked chicken, then prepare a roux with butter and flour in a saucepan.
  • Whisk in milk and half and half, cook until slightly thickened, then stir into slow cooker.
  • Adjust thickness with more half and half if needed, then serve garnished with parsley.

Notes

For a creamier soup, add more half and half to reach desired consistency.
