A hearty and comforting chicken stew perfect for slow cooker meals, packed with vegetables and herbs.

cornstarch (optional, for thickening)

Instructions
Heat olive oil in a skillet; brown seasoned chicken (5-7 min).
Combine carrots, potatoes, onion, and garlic in slow cooker.
Layer chicken on vegetables, add broth, herbs, and stir.
Cook on low 6-8 hrs or high 3-4 hrs until tender.
Mix cornstarch with water and add in last 30 min if thickening desired; stir in peas 10 min before end.
Serve hot, garnished with parsley.
Notes
For a thicker stew, add more cornstarch or cook longer uncovered.
