A hearty and comforting chicken stew perfect for slow cooker meals, packed with vegetables and herbs.

Ingredients

Protein

  • 2 pounds boneless, skinless chicken thighs

Vegetables

  • 4 medium carrots
  • 3 medium potatoes
  • 1 medium onion
  • 3 cloves garlic (minced)
  • 1 cup frozen peas

Broth & Herbs

  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Other

  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions 

  • Heat olive oil in a skillet; brown seasoned chicken (5-7 min).
  • Combine carrots, potatoes, onion, and garlic in slow cooker.
  • Layer chicken on vegetables, add broth, herbs, and stir.
  • Cook on low 6-8 hrs or high 3-4 hrs until tender.
  • Mix cornstarch with water and add in last 30 min if thickening desired; stir in peas 10 min before end.
  • Serve hot, garnished with parsley.

Notes

For a thicker stew, add more cornstarch or cook longer uncovered.
