Ingredients

Meat

  • 2 lbs chuck roast or sirloin tips (cut into bite-sized pieces)

Vegetables

  • 1.5 lbs baby Yukon Gold or red potatoes (halved)

Dairy

  • 6 tbsp unsalted butter (melted)

Garlic

  • 5 cloves garlic (minced)

Spices & Condiments

  • 1 tsp smoked paprika
  • 1 tbsp Worcestershire or soy sauce
  • 0.5 cup beef broth (Use low-sodium if preferred)
  • 1 tsp Dijon mustard
  • 1 tsp Italian seasoning

Salt and pepper

Garnish

  • 2 tbsp fresh parsley or chives (chopped for garnish)

Instructions 

  • Place beef, potatoes, garlic, spices, Worcestershire sauce, broth, mustard, and Italian seasoning into the slow cooker.
  • Cook on low for 4 hours or until beef is tender and potatoes are cooked through.
  • Stir in melted butter and season with salt and pepper to taste.
  • Garnish with chopped parsley or chives before serving.

Notes

For extra flavor, sear the beef before adding to the slow cooker.
