Ingredients

Chicken and Rice

  • 4 pieces Chicken thighs (Bone-in, skin-on recommended)
  • 1 cup Rice (Long grain or basmati)
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice (Freshly squeezed)
  • 1 tablespoon Dried herbs (thyme, oregano)

Instructions 

  • Place chicken thighs in the slow cooker.
  • Add rice, chicken broth, lemon juice, and herbs.
  • Stir to combine and cover the slow cooker.
  • Cook on low for 6 hours or until chicken is tender.
  • Fluff rice and serve with chicken on top.

Notes

For extra flavor, marinate chicken in lemon juice and herbs overnight.
