Ingredients

Oil

  • 1 tablespoon olive oil

Ground Turkey

  • 1 lb ground turkey (98% lean)

Vegetables

  • 1 medium yellow onion (finely diced)
  • 3 cloves garlic (minced)

Spices

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 teaspoons sweet paprika
  • to taste Salt and black pepper

Canned Goods

  • 1 14.5-oz can tomato sauce
  • 1 14.5-oz can diced tomatoes
  • 1 cup chicken broth/stock
  • 1 15-oz can black beans (rinsed and drained)
  • 1 15-oz can red kidney beans (rinsed and drained)
  • 1 cup corn (frozen or canned)

Instructions 

  • Cook ground turkey in a skillet until browned, then add diced onion and cook for 2 minutes. Add garlic and cook for 30 seconds. Remove from heat.
  • Transfer turkey and onion to slow cooker, season with chili powder, cumin, paprika, salt, and pepper.
  • Add tomato sauce, diced tomatoes, broth, beans, and corn. Stir, cover, and cook on high for 4 hours or low for 8 hours.
  • Serve with toppings like green onions, avocado, cheese, and sour cream or yogurt.

Notes

For extra flavor, add a dash of hot sauce or lime juice before serving.
