A hearty and flavorful beef stew perfect for a Whole30 meal, cooked slowly to tender perfection with vegetables and herbs.
Ingredients

sweet onion
(diced to 1”)

(peeled and sliced into ½” coins)

celery
(sliced into ½” coins)

butternut squash
(peeled and cubed (2 cups))
Meat

chuck roast
(large fat deposits trimmed, cut into 2” cubes)

cornstarch or arrowroot powder

tbsp
olive oil

cloves
garlic
(minced)

beef broth

can crushed tomatoes
(fire roasted if available)

italian seasoning

kosher salt

Instructions
Layer the onion, carrot, and celery in the slow cooker.
Toss beef with cornstarch, then brown in a skillet with oil until crusted on at least 2 sides. Transfer to slow cooker.
Cook garlic in skillet, deglaze with beef broth, then pour over beef in slow cooker.
Add tomatoes, seasonings, thyme, bay leaf, then layer squash on top. Cook on LOW 6-8 hours.
Stir the stew, check tenderness, adjust seasoning, then serve hot.
Notes
For best flavor, brown the beef well and use fire-roasted tomatoes if available.
