These flavorful enchiladas combine smoky spices, tender sweet potatoes, and hearty black beans for a satisfying vegetarian meal.

Ingredients

Vegetables

  • 1 large sweet potato, cubed
  • 1 small onion, chopped
  • 1 small sweet red pepper, chopped

Herbs & Spices

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon pepper

Canned Goods

  • 1 can black beans (15 oz), rinsed and drained
  • 1 can enchilada sauce (15 oz)

Tortillas & Cheese

  • 12 pieces corn tortillas (6 inches), warmed
  • 2 cups shredded Monterey Jack cheese, divided

Optional toppings

  • as desired Cubed avocado, sour cream, salsa, minced cilantro and hot sauce

Instructions 

  • Steam sweet potato, onion, and red pepper until tender, about 15-20 minutes.
  • Mash vegetables in a bowl, add cilantro and spices, then stir in black beans.
  • Spread enchilada sauce in a baking dish. Fill tortillas with vegetable mixture, roll up, and place seam side down. Top with remaining sauce and cheese.
  • Bake at 375°F (190°C) for 20-25 minutes until cheese melts. Serve with optional toppings.

Notes

Use fresh cilantro for best flavor and consider adding hot sauce for extra spice.
