12piecescorn tortillas (6 inches), warmed
2cupsshredded Monterey Jack cheese, divided

Instructions
Steam sweet potato, onion, and red pepper until tender, about 15-20 minutes.
Mash vegetables in a bowl, add cilantro and spices, then stir in black beans.
Spread enchilada sauce in a baking dish. Fill tortillas with vegetable mixture, roll up, and place seam side down. Top with remaining sauce and cheese.
Bake at 375°F (190°C) for 20-25 minutes until cheese melts. Serve with optional toppings.
Notes
Use fresh cilantro for best flavor and consider adding hot sauce for extra spice.
